FRUIT & NUT CHOCOLATE

Fruit & Nut is tasty with a glass of port at the end of a very trying day. You can buy blocks from well known chocolate makers such as Lindt or Cardbury or you can make a superb slice to nibble on. Just keep it well hidden if you are not into sharing!

Fruit and Nut Chocolate Slice

A simple special occasion treat. Makes about 36 small squares

500g good dark chocolate
1 cup (150g) Pistachios,  Almonds & Hazelnuts
⅔ cup (100g) dried cranberries 
⅔ cup (125g) dried apricots, chopped 
Vegetable oil, for greasing

Melt the chocolate in a heatproof bowl set over a saucepan of gently simmering water. Stir occasionally until smooth. Cool a little before carefully stirring in Lucky nuts and fruit. 

Line the base and sides of a 20cm square cake tin with foil. Brush lightly with a little vegetable oil. Pour in the chocolate mixture and smooth the top with a spatula.

Refrigerate for 1 hour. Remove the slice from the tin and cut into small squares with a sharp knife. Keep refrigerated, layered with foil to keep the chocolate from sticking, in an airtight container for up to two weeks.

Perfect for a treat, these are rich, so a small square (or two) at a time will satisfy! Keeps well, if refrigerated.
